And itβs hard to find a reliable, consistent source other than its first reference in 1725 by the dude Rosino Lentilio. It could be that there was some form it being made earlier than that. So I didnβt really include it, because spaetzleβs origin is so speculative (and oh boy, I didnβt want to invite the Spaetzle Army as I did that one time with hummus many years ago).
And spaetzle is delicious. Funny enough itβs a celebratory food. Not a survival one.
